Spiced Loin, 

A nice layer of Fatback is left on this sweet, soft ham. Locally grown chillies, fennel, anise and lemon give a delicate spicing but it’s the quality of the pork that carries most flavour.

Ingredients:  Rare breed pork loin, salt, fresh chillies, freshly ground spices, dark muscavado sugar, lemon zest, garlic, ascorbic acid, potassium nitrate.
